1In a large pot, boil pork ribs in water for 1 hour until tender.
2Add tomatoes and onions, simmer for 10 minutes.
3Stir in tamarind paste and fish sauce. Taste and adjust seasoning.
4Add radish and green beans, cook for 5 minutes.
5Add eggplant and cook for another 3 minutes.
6Finally add kangkong and simmer for 2 minutes.
7Serve hot with steamed rice.
Adjust sourness by adding more or less tamarind. Add vegetables in order of cooking time needed.
