1Sauté garlic in cooking oil until fragrant. Wag masyadong brown ha, para hindi mapait!
2Add pork belly and brown on all sides. Char-char lang konti, para mas flavorful!
3Pour in vinegar, soy sauce, brown sugar, water, bay leaves, and peppercorns. Mix well and simmer until pork is tender, around 45-60 minutes. Pwede mo i-cover para mas mabilis lumambot ang baboy.
4Add the rinsed bagoong alamang during the last 15 minutes of cooking. Stir well to combine. Careful ha, baka masyadong maalat!
5Taste and adjust seasoning as needed. Pwede mo pa dagdagan ng asin or sugar kung gusto mo.
6Serve hot with rice. Perfect with a side of atchara (pickled papaya) para balance ang flavors!
