1Sauté the bagoong alamang in the cooking oil until fragrant. 'Wag masyadong sunog ah, baka maging mapait!'
2Add the harder vegetables first: talong and labanos. 'Yung mga matigas muna para maluto nang pantay-pantay.'
3Add the ampalaya and sigarilyas. 'Konting tiis lang, mga bes, malapit na tayong matapos.'
4Add the sitaw and okra. 'Para mas masarap, hayaan mong medyo malutong pa rin yung okra, ha?'
5Season with patis, asin, and paminta. Add suka if desired. 'Taste mo ha, baka kulang pa sa asim o alat!'
6Add water if needed. Simmer until vegetables are tender but still slightly crisp. 'Huwag masyadong luto, para ma-preserve yung nutrients, sosyal!
Para mas sosyal ang dating, serve with a side of crispy tuyo (dried fish). Don't be shy to adjust the amount of bagoong according to your taste. Masarap din kung may konting sili (chili)!
