1In a large bowl, combine ground pork, minced garlic, chopped onion, brown sugar, salt, black pepper, annatto water (strain the seeds), vinegar, and paprika. Mix well, making sure all ingredients are evenly distributed. The secret, bes, is to really *massage* the flavors into the pork. Para mas masarap!
2If using casings, carefully stuff the mixture into the casings. Tie off the ends. If not using casings, form the mixture into small patties or links.
3Heat cooking oil in a pan over medium heat. Carefully place the longganisa into the pan, making sure not to overcrowd it. Grabe, ang init no? Baka masunog!
4Cook the longganisa, turning occasionally, until golden brown and cooked through (around 10-15 minutes). You'll know it's done when the juices run clear. Check mo, ha!
Para mas sosyal, you can add a dash of soy sauce. And bes, don't overcook it, ha? Masarap siya pag juicy pa din!
