1In a large pot, brown the beef cubes in cooking oil. Season with salt and pepper. Remove beef and set aside.
2Sauté onions, garlic, and ginger until fragrant. Add the soaked dried shrimp and cook for a minute.
3Return the beef to the pot. Pour in water and bring to a boil. Reduce heat and simmer for at least 1 hour, or until beef is very tender. Add more water if needed to prevent sticking.
4Stir in peanut butter until smooth and creamy. Add mushrooms, fish sauce, salt, and pepper. Simmer for another 15 minutes.
5If using, add string beans and eggplant during the last 5 minutes of cooking. Add green chilies to taste in the last minute.
6Serve hot with steamed rice. Don't forget the bagoong alamang for that extra *oomph*!
