1Sauté sibuyas at bawang until fragrant. Add baka and brown on all sides. Season with asin and paminta.
2Add bagoong alamang and siling panigang. Stir well and let it simmer for a bit to let the flavors meld.
3Pour in 2 cups of gata and let the beef simmer until almost tender. Add more gata as needed.
4Add the ground peanuts, stir well, and let it simmer for another 15 minutes, or until the beef is very tender.
5Add the remaining 2 cups of gata, patani, sitaw, talbos ng kamote, and repolyo. Simmer until the vegetables are cooked but still crisp-tender.
6Adjust seasoning as needed. Serve hot with steamed rice and bagoong alamang on the side.
