1Combine calamansi juice, garlic, salt, and pepper in a bowl, then add the chicken fillets. Mix well and let them soak up the flavor.
2In a separate bowl, toss together the breadcrumbs and grated cheese.
3Melt the butter until smooth and runny.
4Take each marinated chicken piece, dip it into the melted butter, and then coat it with the breadcrumb-cheese mix. It’s okay if it’s not perfectly covered!
5Arrange the coated chicken fillets neatly on a baking dish.
6Keep repeating the process until all the chicken pieces are ready.
7Sprinkle any remaining breadcrumb mixture over the top and drizzle the rest of the butter evenly.
8Cover the dish with foil and bake at 200°C for 25–30 minutes.
9Take off the foil and bake again until the top turns beautifully golden and crisp.
