1In a bowl, combine suka, toyo, asin, paminta, bawang, and sibuyas. Mix well.
2Marinate the liempo in the mixture for at least 2 hours, or overnight in the ref for extra flavor, bes.
3Prepare your grill. Charcoal is best, pero gas grill is okay din naman. Make sure it's nice and hot, girl.
4Grill the liempo, turning occasionally, until the skin is crispy and the meat is cooked through. This takes around 45-60 minutes, depending on the thickness.
5Serve hot with your fave sawsawan (dipping sauce). Enjoy!

For extra crispy skin, score the liempo before marinating. Don't be afraid to experiment with the marinade – add some calamansi or patis for extra flavor! And always make sure your grill is super hot, charot! Para super crispy talaga yung skin.
