1Mix the filling: In a large bowl, combine ground pork, carrots, onions, eggs, salt, pepper, and grated Cheese. Mix until the texture becomes pasty but you can still see bits of ingredients.
2Prepare for wrapping: Beat 1 egg for sealing.
3Keep a small bowl of clean water to wet your hands so the mixture won’t stick.
4Separate the wrappers and cover them with a damp towel to prevent drying.
5Assemble: Lay one wrapper flat on a clean surface.
6Add 2 tablespoons of the mixture and spread evenly across the wrapper.
7Roll tightly and seal the edge using the beaten egg.
8Cut and portion: After rolling all the lumpia, trim the ends where there’s no filling.
9Slice into 3 or more pieces, depending on your preferred size.
10Deep fry in hot oil until golden brown and crispy.
11Drain excess oil and serve hot with sweet chili sauce or ketchup.
